I'd guess that Arch Linux is worth looking at closely. It takes more work to set up than some distros, but it gives you a good deal of control over what's on your machine and begins as more or less minimalist. It also, in general, has very good documentation. You can check out the talking version at www.talkingarch.tk If you're interested.
