Do it like this:
application/pdf; pdftotext %s - | more; test=test -z "${DISPLAY}"
application/pdf; xpdf %s
The first line does it the text way if $DISPLAY isn't set, i.e. if you're not
using X. The second line is used if the test on the first line fails, i.e. if
you are using X.
