Referring to the suexec documentation, it says to not use it unless you want it, and to disable it by moving the binary. So I ran 'cd /usr/sbin/ && mv suexec suexec.disabled`, restarted apache, and everything started working as expected. I'd suggest improving the error message to mention suexec rather than just 'Premature end of script headers'.
