Joshua hit it right on the head.

Try adding this in your virtualhost directive (oh and don't forget </VirtualHost>, didn't see it in your paste).

Alias /web /var/www/web/vincen/web

Then when you are trying to connect via webdav make sure you specify: vincen.hostinpeace.com/web as your URL to connect to via webdav (whatever webdav client you are using), not vincen.hostinpeace.com .

Perhaps you need to read
http://httpd.apache.org/docs/2.2/urlmapping.html

With your DocumentRoot set to /var/www/web/vincen/web, that directory
(and its subdirectories) are the only ones accessible from the web,
whether you use a regular client or webdav.  If you want to make
/var/www/web/vincen accessible from the web (for webdav only), then
you need to use an Alias or a new VirtualHost with that directory as
its DocumentRoot.
