but each time I connect to server in Webdav mode it goes directly in /
var/www/web/vincen/web :(
        I don't understand what's wrong !

Perhaps you need to read
http://httpd.apache.org/docs/2.2/urlmapping.html

With your DocumentRoot set to /var/www/web/vincen/web, that directory
(and its subdirectories) are the only ones accessible from the web,
whether you use a regular client or webdav.  If you want to make
/var/www/web/vincen accessible from the web (for webdav only), then
you need to use an Alias or a new VirtualHost with that directory as
its DocumentRoot.
