Are you sure that the config file you are inspecting/editing is the one that the 8080 listener is reading? Can you stop Apache and make sure that both port 80 *and* port 8080 stop? If the 8080 port keeps on listening (still returns "Not Found"), then there is a second config file somewhere, with a second error log location in it.
