Here's what I would do... As someone else make a mirror of RH's updates.. Then use apt4rpm to connect to your local mirror.. Updating to the latest RPMs simply requires doing:

apt-get update
apt-get upgrade

which you could run from %post in kickstart. You do have to specially configure your repository, but they explain how to do that here:

http://freshrpms.net/apt/



There is also GRAB that can work with any generic mounted directory, HTTP, FTP, etc server that just contains a bunch of RPMs... You can find that here:
