I know this is a *bit* off-topic, but it looks related.

Are you using NFS for the actual installation, or just 
during the %post? If you are using it for the installation,
has it worked consistently or behaved similarly to this
problem (timeouts)?

I ask because using NFS on 7.1 is showing itself to be 
flaky generally.
