Check and make sure that <whatever>/RedHat/instimage exists and has been
copied over in its entirety on your NFS server.  It sounds like the installer
isn't finding parts of the second stage install.  You might also want to
check to make sure that the <whatever>/RedHat/base dir is present and
has a valid comps and hdlist files.
