You can add the exclusion back into dnf.conf if you like. Or, you can
run dnf like this to exclude it:
dnf --exclude=wine* update
or something similar.
I may not be understanding what you're asking, sorry if I'm off base.

I am afraid to take the exclusion out as if Wine
gets accidentally upgrade to 7.0 and I have
no downgrade, it will take my business down.
