Yes, I discovered this. I tried a dnf remove on each of the
individual *wayland* packages that were installed, and all of them
want to more-or-less take the entire system with them.

be gone?
If there is no supported way to remove the wayland packages, I will
determine what my other options are. IIRC, once a KDE plasma user
selects xorg, that remains the default for future logins?
What about a system with an auto-login?
If all you want is that the option to use "Plasma Wayland" is not presented then you can use this as root.
rpm -e --nodeps plasma-workspace-wayland
