Install "gnome-classic-session" and then you will have a new option in the session list on the login screen.

It is already installed. What next?
At the gdm login screen, when you click on a user, you will see a area to enter the password. You will also
see a "gear" at the lower right of the screen. Clicking on that will give you the desktop options.
GNOME Wayland
GNOME Xorg
GNOME Classic
Maybe not in that order.
Pick the one you want.
