So are you trying to stop dnf from using colors or are you wanting to

options. e.g. "color_list_available_install"

	Definitely the latter: change. I use those ten colors constantly.
But I get :

# dnf install 'dnf command(color_list_available_install)'

It could be a DNF plugin command, try: "dnf install 'dnf-
command(color_list_available_install)'"

	I've chewed and chewed on the above and several variant
interpretations of it -- and I'm lost.

I have no idea what you're trying to do here. Open the /etc/dnf/dnf.conf file in an editor and add lines to set the colors. I don't know what the syntax is for the colors, but something like:
color_list_available_downgrade=red
color_list_available_install=green

Maybe hex codes like #129a44 would be accepted as well.
