You actually got Adobe reader to work at all. Wow!
Alternatives are:
PDF Studio Reader (free)
https://www.qoppa.com/pdfstudioviewer/
and
Foxit Reader (free) under Wine.
https://www.foxitsoftware.com/pdf-reader/
Foxit reader works wonderful under Wine Staging.
I use the paid version of PDF Studio all the time
and I adore it. (I doesn't do Dynamic XFA documents
though, for that you will need Foxit Reader.)

PDF Studio to scan using saned:
