I don't think this is a function of lxdm. I run lxde from startx, but the actual desktop manager I use is openbox, which I set in the lxde configuration. In the configuration file for openbox, I can set the number of workspaces. It defaulted to two, which I upped to 4, but there is no reason you couldn't make it as many as you want. The actual desktop manager you are using is probably *not* openbox, but somewhere in the mate configuration files the desktop manager you *are* using will be set.
