That's not unusual, since the default is device 0, and that usually is the on board audio. You can set it as default in the pavucontrol output devices tab (called fallback there). It seems that alsa doesn't support the functionality of this device (at least I couldn't find any support). Check by typing aplay -Lv to see if there is a 7.1 selection for the device in the output. If there isn't, you won't get it working under pulse beyond the stereo you already have. It might be in development, you could ask on the alsa user or devel mailing lists. They *won't* be available for linux, so unless someone has reverse engineered them, there won't be 7.1 functionality in linux. ...
