It's difficult to separate the two. You'd have to ensure that stderr on the remote end was either written to a file on the server or combined with its stdout:

ssh testhost "(pgrep -f something | wc -l) 2> ./stderr.txt" 2>./ssh-stderr
ssh testhost "(pgrep -f something | wc -l) 2>&1" 2>./ssh-stderr
