Spins are indeed live images. They are not CD sized because it is expected that most users have access to either USB memories or at least writable DVDs. If you do an installation from the live image, the I think resulting installed OS is just as real and full as it would be from netinstall installer or the DVD installer.

The netinstall images and main server image are "non-live" and they have a bit more customizability in the installation phase. The resulting installation should not differ much except in what gets installed by default.
