I can solve it easily by booting to the former kernel, but I wonder. Is there a way to keep the kernel from being ujpdated if the corresponding kmod-nvidia package is not available to be updated as well?
Yes: use akmod-nvidia, which will build a new kmod at boot if needed. Personally, I use both because the kmod is quicker if available, and the akmod can be used as a backup for it.
