Do a lsmod and see what driver module is loading , nv or Nvidia ?
And the you will have to do a edit on your /boot/grub/menu.lst and after:

example;
kernel /boot/vmlinuz-2.6.31.9-174.fc12.x86_64 ro 
root=UUID=db7da871-8b5c-4ad9-8e9b-d7801cb4b492  LANG=en_US.UTF-8 
SYSFONT=latarcyrheb-sun16 KEYBOARDTYPE=pc KEYTABLE=us rhgb quiet 
nv.modeset=0 vga=318

and at the end where you see rhgb quiet put the nv,modeset=0 vga=?    
the resolution you want to set from chart below, as you noticed I set 
mine vga-318 or 1024x768


1600x1200 - 346
1280x1024 - 31B
1400x1050 - 348
1024x768 - 318
800x600 - 315
