Don't you have the solution there!  :-)

Move to the 'latest' version of Fedora a few months before it goes
unsupported.

I actually have quite a lot of sympathy with you.  I recently moved
from Slackware to Fedora 7 (like a couple of months ago), as a result
I got a very stable Fedora 7.  I'm seriously thinking about Ubuntu for
the reasons you outline but Ubuntu is just 'too GUI' for me in many
ways.  Fedora is in a good place for me as regards what it provides
but it would be nice to have a slightly less hectic life (version).
