Using --nodeps often ends in tears...
Have you downgraded evolution-connector as well as evolution?
Did you reinstall FC5 gnutls after removing the later version with
--nodeps?

try manually deleting /usr/bin/ximian-connector-setup-2.6 and
re-installing evolution-connector. If that doesn't work then completely
remove any trace of evolution-connector and re-install it.
