Just to follow up to this,
I see now that in KMail=>Settings=>Configure KMail=>Accounts
if I go to the "alfred" account and click on Modify,
the Advanced tab has an entry "Enable server-side subscriptions".
I've ticked this; and in the Serverside Subscriptions windows
I see the folders in this account listed,
all of which I have ticked.
For good measure I have re-started Dovecot on the server,
and closed and re-opened KMail on the laptop.
But all this has had no effect.

Incidentally, I have no idea what "server-side subscriptions" are.
Is this a speciality of KMail, or do other mail programs share the concept?
