I already tested with different 2A power sources, so I'm sure that this was not the problem. But I just discovered the issue... I was using my old RPi B+ and not my RPi2 (facepalm)!

The rainbow screen indicates a couple of things, a non bootable image,
a not powerful enough PSU (what amps is it?) or not a RPi 2/3 (what is
the version number on the circuit board?).
