You grab a universal zImage, and use mkimage on it at installation time to adjust it to the U-Boot runtime environment where it is installed. Morale of this story: including mkimage (aka "make uImage") as part of the kernel build process was a mistake. It has sent the wrong message to people, presenting uImage as the distributable build product which it is not.
