Yes - I can even mount on the same machine after the install. 

More Fuel:  I have added a   showmount -e nfsserver.domain.com  to the ks.cfg and dumped the output to a /tmp file.  It shows the mountpoint!  When I try actually doing a new mount within ks.cfg, the install seems to hang at updating the MBR. 

Strange huh?

have you tried mounting stuff from the /var/i386/RHAS2.1 directory on
any other machine just to test if it is being exported correctly under
normal circumstances?
