Brute force method is to enter:

locate hda-intel

then rm the modules that you don't want.  I removed the entire 
ubuntu/sound dir, you might want to do the same with updates/sound.  
This way Ubuntu still thinks the packages are installed, so everything 
keeps working.

If you want to roll back to the installed modules, use Apt's reinstall 
feature on the ALSA packages.
