First off, make sure all appropriate volume controls are up.  Gnome 
mixer doesn't seem to enable all the useful ones by default, so if 
you're using that, click Edit->Preferences and turn everything on, then 
make sure they're turned up.  Also look for a headphone switch that 
might need to be turned on.

You might need two tweak the module options.  Here's one explanation:

There's another possibility.  My motherboard chip also uses hda_intel 
(it's a Realtek ALC883).  It's advertised as having a headphone output 
that's electronically distinct from the main surround outs.  This means 
you can play sound through the headphones that's different from what's 
coming out the surround channels.    This would mean the chip really has 
10 channels, so the headphone would be on channels 8 and 9.  (I don't 
know, I haven't tried it.)

If your chip is the same, it would mean you're not hearing the headphone 
output, you're hearing leakage from the other channels.  You'll need to 
hack .asoundrc to get control of those channels.  There's a bit of a 
learning curve to that file, but it's very powerful, and worth the effort.
