I think inetOrgPerson have field for email.
Could there be some downside in using inetOrgPerson for these Project entries? I mean is it recommended to use inetOrgPerson for real user entries or is it just what I choose to use?
When you create entries you define ocjectclasses. You can always change them later. If you use scripts create template with ocjectclasses. Applications usually do soo automatically
