Yes, you can do this.

winetricks does this internally for a few verbs (with a function called
w_override_app_dlls) but doesn't provide a way for you to do it
yourself.

But you can do it with winecfg; just select the application when
you start winecfg, and then set the overrides.  See
http://wiki.winehq.org/winecfg

(Of course, Wine's eventual goal is to get rid of the need for all
overrides, but it might be a while before we get there.)
