If ie6 is interfering with your other apps, removing the overrides set by winetricks ie6 will probably be enough to get them working again, but that may not be enough to enable ie7 to install properly. You could try manually removing all the files and registry entries installed by ie6, but it would be easier to just start with a clean wineprefix. This is one reason why it's best to keep things in separate wineprefixes, especially for experimenting.
