Wine has no magic way to access your video card other then using OpenGL. So don't trick yourself, OpenGL is still required and is the only way to have 3D on *NIX.

With that said you talking about something totally different - whether WoW works better in OpenGL or D3D mode. OpenGL will always be better by definition - Wine just passes all calls to the driver. The question is, is the game itself implemented D3D and OpenGL equally well?
