you can usually rename the exe file to not have the&  ... or you have to type it in with a \ in front, so it knows you really mean an&...

wine Black\ \&\ White.exe

same as you use \ so it knows about a space.

me, I'd just rename it to "Black and White.exe"
Or you could use:

wine 'Black & White.exe' and not have to use the backslashes.
