You would have to build that yourself, and I doubt you want to do that. You should be able to upgrade through your package manager, but you have to add the right repository. I believe it's ppa:ubuntu-wine/ppa, and the package you want to install is called wine1.2. Beyond that I can't help, as I don't use Ubuntu; ask on the Ubuntu forum.
