I'd suggest for Wine.. to build all Wines deps as i386. I haven't tried building Wine on 10.6 for a long time (I build on 10.4 so it can be used on any OSX version), but I recall having issues as well when I had 32 and 64 bit available, Wine would complain about wrong architecture, but if I only had 32 bit, it worked fine...
