You could try using Ubuntu Studio with the realtime kernel. That speeds up everything a bit. Ubuntu Studio is optimized for audio and video applications. Also... Somewhere with the real-time kernel there are directions to give a running process the maximum priority, but I'm not sure I'd recommend it with wine. Which program would you prioritize?
