there is a lot of things like that around.  if you just want default non-modified Wine 1.1.31 running via command line, you can try using WineTermX, just a quick little thing I wrote up.  It has unmodified source Wine 1.1.31, and when you double click the app, it simply starts Terminal.app and sets all your paths and everything right so you can use normal command line Wine from the wine inside the .app.  I pretty much just use it for me... but I don't mind if someone else wants to use it. I tried putting it up as a 3rd party app with some links in the Wiki in case people wanted to use it that couldn't get install from source to work, but I got grief over it and people kept removing it so I gave up.
