"Stereo Mix" isn't an actual output (or input) channel under Windows - it's something virtual specifically made to use system sound as recording input. I've heard that ALSA itself can output sound to a raw file, but I do not have a clue on how to do this in any easy way. I also don't know if it can be made to be a recording source, either.
