The Excel problem could be this bug: http://bugs.winehq.org/show_bug.cgi?id=13822 , but I've never seen it happen with Word. You shouldn't need any overrides other than riched20. Where are you trying to save the file? Googling turned up lots of discussion of this problem in Windows, too, when trying to save to a network drive.
