Do you really want to compile it yourself? Add the following lines to
/etc/apt/sources.list:

# Wine
deb http://wine.budgetdedicated.com/apt gutsy main
deb-src http://wine.budgetdedicated.com/apt gutsy main

Then do "sudo apt-get update ; sudo apt-get install wine"
