Run the "winecfg" application, and in the audio tab, try some different settings. To install OSS, i believe the package that wraps OSS around alsa (so you don't have to have OSS AND alsa installed) is "alsa-oss" So, execute "sudo apt-get install alsa-oss" Then run winecfg and fiddle with the settings, try emulation etc. You'll also have to restart winecfg after changing sound engines in order for sound to be tested correctly.
