This is not a Wine problem but rather the 'broken' X11 that Apple provides does not have complete OpenGL support. You can try deinstalling Apple's X11 and go to Fink and use the X11 that is available. You will need to install XCode to compile it and hope that it works. I have another program that depends on some of this 'brokenness' and thus I cannot deinstall Apple's X11 on my system which is also running the latest version of Tiger (10.4) and I DO plan on upgrading to Leopard (10.5) to get around some of the features that are broken in Tiger's X11.

You may also want to look at Crossover Office for the Mac or Crossover Games for the Mac to see if CodeWeavers has a working version of OpenGL.
