If you install binaries and then "strip" then (or the installer strips them) then they are no good. You have to either: 1. Tell the installer not to strip Wine binaries when it installs them 2. Install debug package (dunno if it's available with gentoo) 3. Compile Wine yourself and do not install it - run it from the compile dir (as noted above)
