But, the program can't see my printer. I think I have to create a symlink in my ~/.wine/dosdevices. I read the Sec. 3.3 in the Wine manual but I still can't figure out exactly how to do this. How do I determine the name of my device as seen by Ubuntu/my program or do I just say "canon mp 600"? I know the sample command is "ln -s /dev/lp0 lpt 1" according to the manual. But, I'm having trouble making sense of this part. Sorry about that but can someone guide me?

You are missing a slash. Should have been
$ cd ~
$ mv .wine .wine.old
