You will not only have to install OSS emulation, but also build wine
with the "OSS" use flag for this support.

Does Wine's OSS driver show up?
Does Wine's OSS not work?
Did you try enabling OSS emulation under the ALSA menu of the kernel
configuration?
That should make wine's OSS driver work.
BTW: Wine's OSS driver is better than Wine's ALSA driver, so you
should stick to OSS for  now.
