Just do

  ./configure --prefix=/opt/wine

(or /usr/local/wine, whatever suits you)

and run wine with /opt/wine/bin/wine.

The paths are adjusted automatically -- the wine from /opt/wine will use
DLLs and other support files from /opt/wine.
