I don't know if this will help, since I had experienced the same problem on
true Windows XP device. So, I would guess it is not wine issue. 

For some reason, when installing iTunes from Apple's dl site, Quicktime
didn't get updated. Whenever launching iTunes after that, I got that error
message, that I have 7.0.d0, and iTunes cannot run with that version of QT. 

I had removed my Quicktime app completely, and then installed latest version
(7.0.4 I believe). 

If you have iTunes installed, it would asked you to "remove" or "repair" -
you should choose "repair" - it would then install fresh, latest Quicktime. 

But I had to remove QuickTime first.

I've been trying to install iTunes with wine. I've followed Frank's
instructions...got them installed, but, when I run iTunes, it complains
that quicktime version required is 7.0.3 or later, and that I somehow
have 7.0.d0....

I've seen others out there having same problem, but, no resolutions.

Any suggestions or links?

I've tried on wine 0.9.10 and now emerging 0.9.12.
I'm running Gentoo linux...
