Filter on something like the List-ID: header, that is why it is there.

No, it won't, the [Wine] must be added by the mail server, not by the replying user. Dvdauthor does it, transcode does it and many other lists I know of and it works fine there. I think it's a good idea since you recognize at first glance what mailing list the message comes from. The wine list administrators surely can manage to prepend [Wine] or whatever to the distributed mails.
