Who is documentations of the others binary (wineserver, winemaker, winemine, winepath, winegcc...etc...) ?
There really isn't much. Wineserver has at least command line options documented. And it gets discussed in various places in the existing documentation.

Some of those other programs mainly just have a brief README in the source directory, but many don't even have that.
