It's not really a sensitivity. It's a broken mouse input. Mac's port of Xorg has broken XInput2 extension that Wine needs for proper mouse functionality. Without it you are back to http://bugs.winehq.org/show_bug.cgi?id=6971 . You can try setting MouseWarpOverride to "force" ( http://wiki.winehq.org/UsefulRegistryKeys ). It might help or might break mouse completely, including menu.
